Due to French restrictions on terminology, Cape sparkling wines made in the Classic Method of making champagne, called Méthode champenoise, by introducing secondary fermentation in the bottle and producing fine bubbles, we use the term Cap Classique (MCC) for our fine sparkling wines. Only the classic Pinot Noir, Pinot Meunier and Chardonnay grapes are used to make these fine wines.

Sauvignon Blanc produces wines of our times: white, dry and refreshingly zesty. This classic variety has been grown for centuries in France, specifically regions like Sancerre, Pouilly-Fumé and the Gironde. Only in the last couple of decades has it become popular in the newer wine regions such as South Africa. The grape produces wines which are typically aromatic, with an aroma often associated with green pepper, gooseberries and asparagus. This variety is suited to compliment most salads, Linguine Gamberi or grilled sole with a hint of lemon.

Chardonnay is without a question the single most sought after varietal in the world today. The grape grower loves to grow it, the winemaker loves to fashion it and we all love to drink it. Chardonnay can be relied upon to produce a wide range of different, but decidedly high quality, styles of wine. It is probably the white grape whose wines have the greatest affinity with oak ageing, giving the wine a full, supple, buttery and fruity mouth feel. It will compliment our Petto di Pollo Chef, or any dish with creamy sauces.

Chenin Blanc is the most planted variety in South Africa. It is a magical chameleon of a grape, although remarkably few of the hundred of growers who harvest it each year even realize that magic is there. Chenin Blanc can produce exquisite sweet whites, attractive dry and off-dry white wines with attractive floral and fruity aromas. We offer you a choice of dry style Chenin Blanc which can be enjoyed with most fish or chicken dishes.

Pronounced [vio-neeh]. Viognier produces full-bodied, golden wines with a haunting and tantalizingly elusive bouquet. Some say may blossoms, others apricots or musky peaches. Its rarity increases its allure for connoisseurs throughout the world.

The Riesling, who has its origin in Germany, is a wonder of a vine. Often called Weisser Riesling in South Africa. They have the ability to age for many years. Riesling should have lively acids and strong aromas of spiced baked apples, honey, mineral notes and often kerosene when aged. Enjoyed best with a spicy dish.

Gewürztraminer has the dubious dual distinction of being the easiest grape variety to recognize and the most difficult to spell. It is a headily scented wine and has its origin in Alsace. Readily identifiable for its rose-petal and lychee fragrance. In the Cape usually made in sweeter styles.

In 1822 ninety three percent of all South African vineyards were planted with Sémillon. So common was it that it was called simply ‘Wyndruif’ or ‘wine grape’. Today, it accounts for less than four percent of our vineyards. It is capable of making high-quality wines and has a good affinity to wood ageing. Semillon has beautiful aromas such as citrus, lanolin, honey and grass.

This classic Bordeaux style white wine, is a blend of Sauvignon Blanc and Semillon. Elegant white wines with, fuller mouthfeel, will match most pasta with creamy sauces as well as rich chicken and fish dishes.

In terms of status and popularity, Cabernet Sauvignon can be regarded a Chardonnay’s red wine counterpart. It is a deep-coloured, thick-skinned grape that produces dark, flavoursome wine, particularly noted for its blackcurrant and cedar, cigar box or lead pencils character. Cabernet Sauvignon wines have the potential, largely because of the tannins which come from the skins, to age a long time and they gain in stature if aged in oak.

Merlot is a classic blending partner for Cabernet throughout the world. The most highly sought-after Merlot dominated wines are clarets of the Pomerol and St-Emilion regions of Bordeaux. However, Merlot varietal wines are increasingly common in South Africa. It has soft tannins with aromas of plums, spice, mint and fruit-cake.

Classic Shiraz (known as Syrah in France) wines from France’s Rhône Valley and from Australia, where it is extensively planted, are very dark, full-bodied, powerful wines with great ageing potential. An interesting thing to know about Shiraz is, despite heavy tannins and staying power; they often reach a drinkable mature stage quite soon. Shiraz resembles a character of raspberries, blackberries, pepper, mixed spice and often also leather or game.

This is South Africa’s most famous wine, and vine. It was bred by Professor Abraham Perold in 1925 from Pinot Noir and Hermitage (Cinsaut). Pinotage produces medium bodied wines with rich fruit and spicy aromas.

Pinot Noir is Chardonnay’s red wine compatriot in both Burgundy and Champagne. It is a variety of relatively low tannin and acidity, medium rather than deep colour and a medium life span. In contrast to Cabernet Sauvignon, Pinot Noir is very sensitive to climate and to the way it is handled in the winery – it prefers cooler climate. Pinot Noirs have aromas of raspberries, strawberries, cherries, violets, game and in maturity – compost.

A Bordeaux blend will have the classic varieties of Bordeaux in the blend: Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec. In South Africa the blend will often only have two of three of these varieties in it. Some blends will have more Cabernet Franc and Merlot and others Cabernet Sauvignon and Merlot – which ever way, the blend consist of the classic varieties from Bordeaux.
